Hot Fudge Sauce
4T cocoa Powder
2C sugar
4T Flour
dash of salt
1 (12oz) can evaporated milk
1.In a pan combine cocoa,sugar,flour and salt.
2.Whisk together until well blended
3.Whisk in milk and bring to a boil over med heat. Stir boiling 2-3 min
4.Remove from heat and cool slightly (the longer you let it cool the thicker it gets)
* This was a fast and easy hot fudge sauce and tasted pretty good I think that I will keep looking for a new one but this wasnt bad I give it a 4

Baked Orange Chicken
2 lbs chicken,cut in cubes
1/2 c flour
1 tsp garlic powder
1/2 tsp pepper
2 tbsp butter
1 1/2 c water
1/4 c + 2 tbsp fresh orange juice
1/3 c rice vinegar
2 1/2 tbsp soy sauce
1 tbsp orange zest
3/4 c br sugar
1/2 tsp finely minced ginger
1 tsp minced garlic
3 tbsp cornstarch
1/4 c water
1.Heat oven to 350. Melt butter and put into baking pan. Put chicken,flour,garlic powder and pepper in a plastic bag and shake. Put chicken in a single layer in pan and bake for 30 min.
2.In a saucepan combine water,vinegar,soy sauce,juice and rind. Stir over med heat,add sugar,ginger and garlic. Bring to a boil,then add cornstarch mixed with water. Boil to thicken.
4.Serve over rice and sprinkle with green onion.(optional)
* We liked this pretty good it does have a stong orange flavor and is juicy from baking it. It also came together pretty fast it was ok not a favorite I give it a 4 I got this recipe from hunwhatsfordinner she has lots of yummy recipes

Banana Bundt Cake
2 ripe bananas, mashed
1 box white cake mix
1 small box vanilla instant pudding (I used french vanilla)
3 eggs
1/3 cup water
1 cup sour cream
2 T vegetable oil
1/4 tsp baking powder
1.Preheat oven to 350
2.Combine all ingredients in bowl of mixer. Beat together until light and fluffy. Bake in greased Bundt pan for 40-50 minutes, until a cake tester inserted in the middle comes out clean. Invert and cool on wire rack. Dust with powdered sugar to serve.
* I thought that this cake was ok it was not something that I loved but everyone else that had some said that they loved it so its up to you. I thought that it had good texture but there was just something that I didnt love I give it a 4

30 min dinner rolls
3 c. hot water
2/3 c. oil
3 1/2 T. yeast
1/2 c. sugar
1 1/2 T. salt
2 eggs
8-9 c. flour you may need a little more (or less) flour to make the dough the perfect texture. You want the dough a little soft, but firm enough to handle and roll into balls.
1.Mix first four ingredients and let rest for 15 minutes.
2.Add the salt and eggs. Gradually add the flour. Shape dough into dinner rolls and place on a greased cookie sheet. After shaped, let rest for 10 minutes. (I let mine rise about 45 min just because I had the time to do it)
3.Bake 10 minutes at 400 degrees until golden brown. Take out of the oven and brush tops with butter.
* These rolls were quick to make and like I put on the top I let them rise about 45-50 min cuz I had time so that made them big. But I am sure that they would taste as good if you were short on time and only had 10-15 min for them to rise. I give them a 4 1/2 I got 24 large rolls from this recipe

Grilled Cheese Sloppy Joes
1 batch sloppy joe (you can make fresh or use leftovers)
8-10 slices white bread
butter or butter spray
sliced Cheddar cheese
1.Prepare sloppy joe filling according to recipe directions. Meanwhile, heat skillet over medium heat. Spread butter over one side of each slice of bread. 2.For each sandwich, place one slice of bread, butter side down into a skillet. Top each slice with some cheese, some of the beef mixture and additional cheese. Place an additional slice of bread on top, butter side up, creating the sandwich.
3.Cook until bread is nicely browned, carefully flip over and cook until other side is browned.
4.Repeat until all the sandwiches are made Makes 4-5 sandwiches.
This was a quick and easy way to change up leftover sloppy joe mix. We did use two slices of cheese per sandwich and it was yummy. Everyone ate them up I give them a 4 1/2

Our Family Sloppy Joes
1lb hamburger
1 med onion chopped
1/2 green,red and yellow pepper
1 1/4 cup bbq sauce (I use either bulls eye or mesquite smokey flavor) You can use any kind you like.
3/4 cup Ketchup
1.In a pan cook the hamburger,onion and peppers until meat is no longer pink and the peppers are tender.
2.Add the ketchup and bbq and mix well.
3.Let simmer 5-7 min and eat
* This is our quick go to recipe for sloppy joes at our house. I love that there is all the peppers in it to make it more filling and gives it a little crunch. I have tried other sloppy joe recipes but I always come back to this one. I give it a 5

My 500th Recipe ..Amazing Eclairs..
For the Pastry:
1 stick butter
1 c. water
1 c. flour
1/4 tsp. salt
4 large eggs
Preheat oven to 450 degrees. Lightly grease a large cookie sheet and set aside.
1.In medium saucepan, combine 1/2 cup butter and water. Bring to a boil, stirring to melt butter.
Reduce heat to low and stir in flour and salt with a wooden spoon until the mixture begins to form a stiff ball of dough.
2.Remove from heat and add eggs, one at a time, stirring vigorously after each addition to ensure they are incorporated. Work quickly, especially with the first one, to prevent it from cooking into scrambled eggs on the bottom of your warm pan.
3.With a spoon or pastry bag fitted with a large tip, spread/pipe the thick dough onto prepared cookie sheet into 10-12 strips approximately 1 1/2 x 4″ each. I used a large Ziploc bag and cut off a little corner.

4.Bake for 15 minutes, then reduce heat to 325 and bake another 20 minutes, until puffed and golden and hollow sounding when lightly tapped on the bottom. If you under cook them, they will flatten out.
5.When removed from oven, IMMEDIATELY pierce the ends almost through to the other side with a sharp knife to let steam escape and prevent any sogginess in the middle. This hole is also where you will be piping your filling into. Let cool completely before filling and icing (this will only take about half an hour).
For the Custard Filling:
1 (4 serving size) package instant vanilla pudding mix
2 cups milk (or as called for on pudding package)
1 cup heavy cream
1/4 cup powdered sugar
1 tsp vanilla extract (I used Vanilla Bean Paste)
dash of salt
1.Combine pudding and milk in a bowl and mix according to package directions. (Let the pudding set in the the fridge about 10 min) In a separate bowl, beat the cream with an electric mixer until soft peaks form. Beat in 1/4 cup sugar, 1 tsp vanilla, and dash of salt. Fold whipped cream into pudding.
2.Scoop mixture into pastry bag fitted with a smallish tip and pipe mixture into centers of eclairs until full. This is a bit of a messy business, but worth it for ease of eating and pretty appearance.(I used a Wilton tip # 7 to fill my eclairs) You will probably have some custard leftover.
For the Chocolate Icing:
2 oz semisweet chocolate (or 1/3 cup semisweet chocolate chips)
2 Tbsp butter
1 cup powdered sugar
1 tsp vanilla extract
3 Tbsp hot water
1.Melt the chocolate and 2 Tbsp butter over low heat in a saucepan. Stir in 1 cup powdered sugar and 1 tsp vanilla. Stir in hot water, 1 Tbsp at a time, until icing is smooth and reaches desired consistency.
2.Drizzle, pipe or spread over filled eclairs.( I just turned mine upside down and dipped them into the chocolate)
* I cant believe its already recipe 500 wow it came so fast. I have had a great time doing my blog and really enjoy all the feedback that I get from people. I made these eclairs for a party that we went to and they were one of the first things to go. Everyone loved them and wanted the recipe. There easy to make but they are a little time consuming but well worth it. I have already been asked when I am going to make them again lol.A single batch of these eclairs makes 10-12 eclairs depending on size. They really are amazing and I give them a 5
