Oven baked potato wedges




1/2 cup grated Parmesan cheese
2 tablespoons olive oil
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon salt
4 russet potatoes, scrubbed and cut into eighths

1.Preheat an oven to 425 degrees
2.Place Parmesan cheese, olive oil, onion powder, garlic powder, pepper, and salt, into a resealable plastic bag.

3. Cut potato's and boil them in a pot of water for 7-10 min


4.Seal the bag, then shake to coat the potatoes with the seasoning. Spread the potatoes over a foil lined baking sheet.

5.Bake in the preheated oven until the potatoes are crisp, about 15-20 min. Flip the potato's over Turn up the heat to 450 and bake another 10 min to crisp up.

Pizza Ring



6-8 Tbsp. butter or margarine, melted
1 tsp. Italian seasoning
1/2 tsp. garlic powder
2 cans (12 oz. each) Pillsbury Golden Layers refrigerated flaky biscuits
40 small slices pepperoni
8 oz. mozzarella cheese,
1/4 cup grated Parmesan cheese
1 1/4 cups pizza sauce, heated

green pepper,onion,olives optional

1.Heat oven to 350 degrees
2.Spray bundt pan with cooking spray.
3.In small bowl, mix melted butter, Italian seasoning and garlic powder.

4.Separate 1 can of dough into 10 biscuits; press or roll each into 3-inch round. Place 2 pepperoni slices in center of each biscuit round. Top each with piece of mozzarella cheese and any other topping you want to use. Bring dough up around filling; press edge to seal and shape each into ball. Roll in butter mixture; place 10 balls in pan.



5.Sprinkle dough balls with Parmesan cheese. Repeat with remaining can biscuit rounds, placing balls over balls in pan.

6.Pour remaining butter mixture over top. Bake 33 to 38 minutes or until deep golden brown. Cool 5 minutes. Gently loosen bread from sides of pan. Place large heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm with warm pizza sauce for dipping.

KFC Honey BBQ sauce



1 1/4 Cup Ketchup
1/3 Cup White Vinegar
1/4 Cup Molasses
1/4 Cup honey
1 tsp liquid smoke
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp chili powder

1.Combine all in a pan over med heat. Stir until well combined bring to a boil. Then reduce heat and simmer uncovered 15-20 min.

Chicken Enchilada Pasta


2-3 chicken breasts, cooked and cubed
2 tablespoons olive oil
2 garlic cloves, finely minced
1 medium onion, diced
1 red pepper, diced
4-ounce can diced green chilies
1/2 teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin
2 (10-oz) cans green chili enchilada sauce
2/3 cup red enchilada sauce
1 can sliced black olives
1 cup sour cream
1 1/2 cups shredded cheese
16 oz box. penne pasta

1.Bring a large pot of water to a boil. Cook the pasta until tender.
2.While the pasta is cooking, heat the oil in a large nonstick skillet and add the onion. Cook for 2-3 minutes until onion is translucent. Add the garlic and red pepper and cook for another 2 minutes, until pepper is barely tender. Add the cooked chicken, green chilies, spices, enchilada sauces and olives. Let the sauce simmer for about 8-10 minutes.


3.Add the sour cream and cheese and heat through, until the cheese is melted (but don’t boil!). Pour the pasta into the sauce and mix well.


4. Garnish with extra sour cream, cheese, diced tomatoes, and green onions .

Jelly filled muffins



1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg
1/2 cup milk
1/3 cup butter or margarine, melted
1/2 teaspoon vanilla extract
1/4 cup jelly your choice of flavor
TOPPING:
3 tablespoons butter or margarine, melted
1/3 cup sugar
1/2 teaspoon ground cinnamon


1.In a bowl, combine the first five ingredients. In another bowl, whisk the egg, milk, butter and vanilla.

2.Stir into dry ingredients just until moistened. Spoon half of the batter into 9-10 greased or paper-lined muffin cups.

3.Spoon 1 teaspoon jelly in center of each. Fill muffin cups two-thirds full with remaining batter.


4.Bake at 400 degrees F for 20 minutes or until a toothpick inserted 1 in. from the edge comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Brush tops with butter.

5.Combine sugar and cinnamon; dip tops of muffins in mixture.
6.Serve warm.

Chicken Zucchini Tomato Bake.


3-4 Chicken Breasts
1 egg
1T Water
Salt & Pepper to taste
1 Cup Panko Bread Crumbs (reserve some for topping) I used Parmesan Italian flavored :)
4T Olive oil
3-4 plum tomato's
1 Large or 2 Med Zucchini
1Cup mozzarella cheese shredded. (I used sliced its what I had)
Basil to taste


1.Preheat oven to 400
2.In a small bowl mix together the egg,water and some salt and pepper
3.Place Panko crumbs into a zip lock bag
4.Dip chicken into the egg mixture and then into the Panko crumbs and shake until well coated.
5.Heat skillet to Med-high heat and add 2 T olive oil cook the chicken 3 min per side until nicely brown. (it does not cook the chicken it will cook the rest of the way in the oven)


6.Remove the chicken from the pan and set aside. Add the sliced zucchini in the pan with more oil if needed and saute  2-3 min.

7. Pour into the bottom of a greased casserole dish. Sprinkle with additional Panko crumbs and top with tomato's and 2/3 cup cheese Sprinkle with basil and salt and pepper to taste



8.Top with chicken cover and bake for 25 min. Uncover and add the rest of the cheese. Bake for 15-20 more min until juices run cleat. Garnish with additional basil.


Lasagna Sandwich


1/4 c sour cream
2 T chopped onion
1/2 t dried oregano
1/4 t seasoned salt
8 slices Italian or other white bread
8 bacon strips, cooked and halved
8 slices tomato
4 slices mozzarella cheese
2-3 T butter or margarine

1.Combine the first four ingredients. Spread on four slices of bread.

2.Top each slice with four bacon pieces, two tomato slices and a slice of cheese. Top with remaining bread.


3.In a skillet over medium heat, melt 2 T butter. Cook sandwiches on both sides until bread is lightly browned and cheese is melted


4. Makes 4 sandwiches. ( I cut the recipe in half and only made 2 sandwich's)
