Potato Logs/Cakes


2 cups mashed potato's
1/2 cup sour cream
4T melted butter
1T minced onion
1T parsley
1 1/2 Cups bread crumbs
1/4 cup Parmesan cheese
1/2tsp paprika


1. Mix together potato's,sour cream and 2 T of melted butter

2.Stir in onion and parsley


3.Form potato's into potato logs and roll into the bread crumbs mixed with the Parmesan cheese,paprika and remaining 2T butter.


4.Place on a greased cookie sheet and bake at 400 degrees for 30-35 min or until crisp flipping over every 15 min.

Macaroni Salad




2 Cups macaroni noodles
1 cucumber chopped
1/2 cup chopped celery
1/2 cup chopped green pepper
3 chopped green onions

1/2 Cup mayo
1/4 cup miracle whip
3/4 tsp paprika
1/2 tsp salt
1/3 cup dill pickle relish


1. Bring 5 cups water to a boil. Add pasta and cook 12-15 min or until al dente
2.Drain and cover with cold water to cool drain well
3.Mix together dressing ingredients

4. Add chopped veggies and dressing to the noodles in bowl and mix well.


5. Store in fridge at least 2 hours to let the flavors blend

Mozzarella Stuffed Meatballs



1 egg
1/4 cup milk
1 cup *fresh bread crumbs
2 tsp dry parsley
2 cloves garlic, minced
1/2 tsp oregano
1/2 tsp basil
1/2 tsp pepper
1/4 tsp salt
1/2 pound pork sausage
1/2 pound ground beef
4 mozzarella cheese sticks, each cut into 6 pieces
1 26oz jar spaghetti sauce
Hot cooked pasta

1.Combine first nine ingredients in a large bowl.


2.Add sausage and ground beef and mix well.


3.Shape meat mixture around the cheese cubes.


4.Place meatballs on a greased cookie sheet. Bake at 400° for 25-30 minutes, flipping them over in the pan occasionally so they brown evenly.


5.Heat spaghetti sauce in a large saucepan. Add cooked meatballs. Serve over hot pasta.


Notes:
*Don’t substituted dry bread crumbs. They will soak up too much liquid and make your meatballs dry. I just took a slice of bread and ground it up in my food processor. A blender would work fine too.
* Makes 13 giant meatballs

Doughnuts Again....



So yes we made doughnuts again :) It takes five min and they are delicious but this time we did a few new toppings.

Chocolate Glaze
1 cup powered sugar
3 T milk
1/4 Cup cocoa powder

mix all together until well combined


Maple glaze
1 cup powder sugar
2 T milk
1 tsp maple extract

Mix all together until well combined.


We also filled a few with jelly yummy.

Doughnuts...




I saw these on http://www.cookingwithcarrie.blogspot.com/ and knew that I had to try them. They were so easy and so yummy. I cant wait to try them with diffrent toppings.

2-4 cups of oil for frying (the oil needs to be at least 2 inches deep)
1 refrigerated tube of 10 biscuits (the smaller tubes, they come in a 4-pack)
Glaze
2 T butter
1 cup powdered sugar
1/2 teaspoon vanilla
2 tablespoons milk

1.Start warming the oil in a pan on the stove. On med heat the oil takes about 10-15 minutes to warm up.
test the oil by dripping a drop or two of water in the oil. If the water pops then the oil is ready.
2.For the glaze. Melt the butter in the microwave and add the powdered sugar, vanilla and milk. Stir until combined.

3.For the donuts. Use a small circle to cut circles in each biscuit. ( I used the end of a glue stick tube)

4.Place a few donuts in the oil and cook until browned this only takes about 30 sec to one min. Flip and cook for another 1 minute until brown.


5.Pull the donuts out of the oil and set them on  paper towels to drain the excess oil. While the donuts are warm, dip them in the glaze.


6.Place on a cooling rack to set up. Add sprinkles at this time while the glaze is still wet.


Tortilla Stack



1 can refried beans
1/2 cup salsa
1/2 cup soup cream
2T taco seasoning
2 Chopped tomato's
4 sliced green onions
6 Large flour tortillas
2 cups shredded lettuce
2 cups shredded cheese

1.Combine beans,salsa,1 T taco seasoning and 1/4 cup sour cream.Mix well Add green onions


2.Place tortilla on a baking sheet top with two scoops bean mixture and spread within 1/2 inch of edge. Top with some shredded cheese.

3.Repeat layers until all tortillas are gone. Leaving top tortilla plain

4.Bake at 375 degrees for 30 min or until top tortilla is crisp

5.Mix the remaining 1/4 cup sour cream and 1T taco season and spread over top tortilla stack
6.Sprinkle with remaining cheese,lettuce,tomato's and salsa

7.Cut into wedges

Chicken and Rice



3 Large Chicken Breasts
1 1/4 cup uncooked rice
1 can cream of chicken OR mushroom soup
1 cup water
1 cup milk
1 pkg dry onion soup mix
Sour cream (optional)


1. Pour rice into a casserole dish and top with chicken breasts

2. Mix together the soup,water,milk and onion soup mix in a bowl

3.Pour over the chicken in the pan

4.Cover pan with foil and bake at 350 for 1 hour
5. Remove foil turn up the temp to 375 and bake 15-20 more min until chicken is no longer pink.
6. Top rice with sour cream (optional)


* You can also make this in the slow cooker layer all the ingredients in the crock pot and cook on high 5-6 hrs

Cheesy French Bread



1 Loaf french or Italian bread
mayo Parmesan cheese
Cheddar cheese
mozzarella cheese

1.Cut loaf of bread in half and spread each half with mayo.

2.Top with Parmesan,Cheddar and mozzarella cheeses.

3. Place on a cookie sheet and broil until cheese melts about 4-5 min.

Honey Mustard Sauce


1/2 Cup Mayo
2T Yellow Mustard
1T Dijon Mustard
2T + 1/2 tsp honey
1/2 T Lemon Juice


Mix all in a bowl and chill at least 2 hours.


* Honey mustard is so hard to find at the stores that tastes as good as it does in the restaurants. This one is a winner if you like honey mustard to dip your stuff in this is the one to make :)
