Cake Mix Cookies
1 (18.25 oz.) box cake mix
1 tsp. baking powder
2 eggs
1/2 cup vegetable oil
1 cup semisweet chocolate chips
1- Preheat oven to 350 degrees F
2-In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended. (It was a bit crumbly for me so I used my hands to really mix it well- it's not as smooth as typical dough.)
3-Stir in chocolate chips, or your choice of additions. Drop by rounded spoonfuls onto cookie sheets.
4- Bake for 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
* I got this recipe from stephaniecooks I am not a big fan of cake mix cookies so I didnt love these. My husband said that his grandma always made them so he really liked them and the kids will eat any cookies that you give them lol I did like that you can use any flavor cake mix and mix ins

Taco Pasta
1 pound ground beef
8 ounce small dry pasta shapes
1 small onion, chopped
1 clove garlic, minced
1 cup salsa
1 packet taco seasoning
3 ounce cream cheese
1/2 cup sour cream
Salt and pepper
Shredded Cheese for topping
1.Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving 1/2 cup of pasta water. Set aside.
2.Meanwhile, in a large skillet, cook the ground meat and onion over medium-high heat until no longer pink. Once the meat is cooked through, drain off the excess fat and mix in the garlic. Cook until fragrant, about 30 seconds. Mix in the salsa and taco seasoning and let simmer over medium heat for about 5 minutes. Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste.
3.Top with shredded cheese and more sour cream and salsa if desired.
* I got this recipe from www.plainchicken.com It was so easy to throw together and was super yummy. The leftovers also tasted great.

Cottage Cheese Jello
1 3oz size box of Jello (any flavor)
2 cups cottage cheese
1 8ox tub of thawed cool whip (I normally only use about 1/2-3/4 the tub I think that a whole tub is to much)
1. Mix the dry jello with the cottage cheese until fully combined.(Mix a few minutes if you dont mix it well enough it will taste grainy from the jello)
2. Fold in the cool whip and chill until ready to serve.
* Thats it super simple and easy I love that its a fast last min side dish and you can use any flavor that you like. I have made this with sugar free jello and sugar free cool whip many times and its just as good. You could also add some fruit to it if you would like.
