Sweet Cornbread Cake




1/2 cup cornmeal
1-1/2 cups all-purpose flour
2/3 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
2 tablespoons and 2 teaspoons melted butter
1 tablespoon honey
2 eggs, beaten
1-1/4 cups whole milk

1.Preheat oven to 350 degrees and grease a 8X8 inch baking dish.
2.Stir together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl. Pour in the vegetable oil, melted butter, honey, beaten eggs, and milk, and stir just to moisten.


3.Pour the batter into the prepared baking dish and bake in the preheated oven for 45 minutes, until the top of the cornbread starts to brown and show cracks.
What we loved about this bread it the texture. Its not like normal cornbread that crumbles all over when you bite it. Its more of a cake texture and makes it so much eaiser to eat. And it is so so yummy to :)

  2. can you substitute olive oil for vegetable oil and if so how much would you recommend?
