Vegetable Fried Rice

1 1/2 cups uncooked white rice
6 eggs beaten
1 pkg 16oz stir fry vegetables thawed
1 cup Asian toasted sesame dressing (preferable Kraft brand)
2-3 green onions sliced
1/4 cup unsalted peanuts or cashews chopped

1.Cook rice according to package. Let cool
2. In a wok or large pan heat 1 tsp oil over med high hear. Add eggs cook stirring until just set. About 2 min.
3.Remove from pan and set aside.


4.In the same pan add 2 tsp oil and add the thawed veggies 1/4 tsp salt and rice. Cook until heated thru and veggies are tender. About 5 min

5. Add the eggs and dressing mix well and cook 1-2 min

6. Remove from heat and stir in the onions and nuts.
