Baked Chicken Fajitas
1 pound boneless, skinless chicken breasts, cut into strips
1 (15 oz) can diced tomatoes
1 (4 oz) can diced green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced
2 T vegetable oil
2 t. chili powder
2 t. cumin
1/2 t. garlic powder
1/2 t. dried oregano
1/4 t. salt
1/2 T Fajita seasoning
flour tortillas
1.Preheat the oven to 400 degrees. Grease a 13×9 baking dish. Mix together chicken, tomatoes, chilies, peppers, and onions in the dish.
2.In a small bowl combine the oil and spices. Drizzle the spice mixture over the chicken and toss to coat. Sprinkle on the 1/2T Fajita Seasoning.
3.Bake uncovered for 20-25 minutes stir and bake another 15-20 min or until chicken is cooked through and the vegetables are tender.
* This was a great and easy way to make fajitas. I loved that you can just throw it all in the pan and put it in the fridge until it was time to cook it. I will for sure be using this method again to make my fajitas in the future they were great. I give them a 4 1/2 on the scale.
