Crazy Cooking Challange (Creamy Chicken Noodle Soup)

Its time again for the CRAZY COOKING CHALLENGE and this month we are all in search for the ultimate Chicken Noodle Soup recipe. I love soup and its even better in the winter months when its so cold outside. I knew that I was going to be in on this challenge and started my search. I knew that I didn't want the typical broth based noodle soup but something that was a little different. Thats when I found this Creamy Chicken Noodle Soup over at Mom I'm Hungry it sounded so yummy and was so simple another bonus. The soup turned out really yummy so try it our yourself and let me know what you think :)


6 cups chicken broth (I added 3 more cups of water because I like more liquid in my soup.)
2 handfuls of shredded carrots
3 stalks of celery finely chopped
1/2 chopped onion

2 cans cream of chicken soup
1 can evaporated milk
12 oz. bag of frozen homemade egg noodles

1 Rotisserie chicken
salt and pepper to taste
I also added about 1/4 tsp dill weed just cuz I love the taste of it in chicken soup



1.Pick all of the chicken off of the Rotisserie chicken and shred. Put chicken stock, carrots, celery, onion,water and noodles in chicken broth and boil for 20 minutes.



2.Then add chicken, soup, and milk into broth and vegetable mixture. Season with salt pepper and dill weed

3.mix all together until well combined

  3. I have never used evaporated milk in a soup recipe, but I am intrigued. I plan to try this next time. Love the dill! It tastes great in soup, doesn't it?! Great recipe. Thanks!

  4. I've never heard of adding dill. Will have to remember that. And the creaminess would make for a nice change. Yum!
