1 stick softened butter
6 T packed light brown sugar
1/2 Cup granulated sugar
1 large egg
1/2 Tablespoon pure vanilla
1 3/4 Cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 Cup chocolate chips
9-10 Oreo Cookies
1.Preheat oven to 350 degrees.
2.In a mixer cream butter and sugars until well combined. Add in egg and vanilla until well combined.
3.Add the flour, salt and baking soda. Mix just until combined and add chocolate chips.
4. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.You might need to use a little more depending on your scoop size.
5.Place onto a parchment paper and bake cookies 14-16 minutes or until cookies are light golden brown.
6. Let cool for 5 minutes before transferring to cooling rack.
* This recipe will make 9 Large Cookies. Double it if you would like more but they are very rich and filling.
