Biscuit Chicken Pot Pie (Slow Cooker)

 
 
1 1/4 lb boneless skinless chicken thighs
1 medium onion, chopped (1/2 cup)
1/2 teaspoon poultry seasoning
1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
1 jar (18 oz) chicken gravy
2 medium stalks celery, cut into 1/2-inch slices (3/4 cup)
1 bag (12 oz) frozen mixed vegetables
1/3 cup sour cream
6  Flaky Layers biscuits
 
1.Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place chicken in cooker. Top with onion, poultry seasoning, thyme, pepper, gravy and celery.
2 Cover; cook on Low heat setting 8 to 10 hours.
 

3 Gently stir frozen vegetables into chicken mixture. Increase heat setting to High. Cover; cook 30 minutes longer.When done stir in the 1/3 cup sour cream.
 
4 Meanwhile, Bake biscuits as directed .
5 Spoon about 1 cup chicken mixture onto each of 6 plates. Top with split biscuits.

  1. Just some questions, I think. What if a person were to just put the biscuits on top about the same time as the frozen vegetables were mixed in. Would that work? Or perhaps putting the biscuits in at the beginning? Would that work? Or would they just come out like dumplings?

    1. I think if you cooked them from the beginning they would get too soggy, if you put them in with the veggies, they will be like dumplings. All depends on what you want, dumplings or biscuits.

  2. I am not really sure. I would think that they would go soggy and more of a dumpling so maybe its that what you like. But I really am not sure on that one. I like the biscuits to still be a little crisp so thats why I add them at the end. I dont know how long they would actually need to cook in the slow cooker to be cooked all the way thru. Sorry I am not much help with your question...

    Biscuits, would they properly cook if I put a layer of aluminum foil on top the chicken cooking in the crock pot, placing the foil atop the chicken then the biscuits?

    1. I am not sure about this . I have never tried it this way to me it would seem like they would not fully cook this way in the crockpot because of all the moisture that collects on the top. But if you do try it out let me know how it works :)

  4. When do you shred the chicken - after it is cooked? I'm new at this cooking thing, so I have no clue!

    1. yes you shred the chicken after its cooked. When its been in the slow cooker all day and its done it should shred super easy and quick. Let me know how it turns out if you make it. Good luck :)

  5. Could you cook this on high for 4 hours? I was going to make chicken pot pie for dinner with pie crusts and all, but this sounds wonderful.

    1. Im sure that you could I have never tried it but most recipes you can half the time if you cook it on high in the slow cooker. Hope it works and you like it :)

    1. Most vegetable mixes like this are frozen in a brine so I only add about a quarter to one-half teaspoon for such a small amount of chicken
